I have made this ahead, stopping at the point where one adds the couscous. Refigerate it to preserve the chicken, then when ready to bake, add the couscous and plunk it in the oven. Note, this post contains instructions for finishing on the stovetop or the oven. I like putting it in the oven.

I hardly tasted any other flavor or spice except tomatoes. Even your photo of the finished dish looked nothing like mine, which basically looked like tomato sauce with some carrots, onion and chicken.

I think I’d use 1/2 the amt of tomatoes next time, more of the spices, more apricots, ginger, and omit the couscous/quinoa and make it separately. I’d also considered cooking it longer and at a lower temperature.
