I used the suggested substitution of vegan ricotta, because I like better than dairy ricotta, but used regular block cheese. I agree that the pesto is a must! It did take a bit long let to make than my usual meals. So I roasted the eggplant and made the ricotta in advance. My husband kept going back for more. This was perfect for a cold snowy day!
