I did alter it just slightly because I didn’t have quite enough Parmesan cheese on hand. I substituted some of the cheese used in the eggplant ‘coating’ with nutritional yeast and it worked brilliantly! I love the lightness of the Panko crumbs too. And the eggplant was melt-in-your-mouth divine!

My husband told me it was the best Eggplant Parmesan he’d ever tasted! So thank you Sylvia! This recipe will definitely be on repeat at this home.
